Biscuit Cake

To unmold the cake and then cover it with chocolate, let it cool beforehand. We will mix the chocolate with butter in a bain-marie and proceed to spread it evenly

The cakes are very useful sweets that make excellent breakfasts.

The biscuit cake, substitute the flour for ground cookies. In this way, it is not so heavy and it also gives it a different flavor. We teach it to you so that you enjoy it.

1. Maria biscuit cake

Ingredients:

  • 1 package of Maria cookies
  • 4 eggs
  • 150g sugar
  • 100 ml olive oil
  • 100 ml milk
  • 1 sachet of yeast
  • 1 teaspoon of butter and flour to spread the mold
  • Powdered sugar

Process:

  • Preheat the oven from above and below to 180ºC.
  • Grind the cookies with a food processor or mixer. If you don’t have them, they can be put in a plastic bag and rolled over until they are reduced to a fine powder.
  • Put the eggs in a bowl, add the sugar and beat with rods until it is whitish.
  • Add the oil, milk, cookie powder, yeast and stir well with a spatula, until a fine dough is left.
  • Butter a circular mold and sprinkle it with flour.
  • Pour the cake mixture into the pan and bake for 35 minutes or until a toothpick inserted in the center comes out clean.
  • Wait for it to cool down before unmolding so that it does not crumble.
  • Once cold, remove from the mold and sprinkle with icing sugar.

2. Biscuit and chocolate cake

Ingredients:

  • 150 g of chocolate fondant in pieces
  • 1 package of cookies
  • 2 teaspoons baking powder
  • 100 g butter, softened at room temperature
  • 75g sugar
  • 3 eggs

Process:

  • Preheat the oven to 180ºC.
  • Grease and flour a circular baking dish.
  • Put the chocolate in a container and pulverize it with a mixer or food processor.
  • Remove the chocolate and in the same bowl of the blender, crush the cookies until they form a fine powder.
  • In a separate bowl, mix the baking powder, butter, sugar, eggs, and cookie powder until smooth.
  • Incorporate the chocolate and mix again until well integrated.
  • Pour the mixture into the mold and bake at 180ºC for 20 or 25 minutes until when you click a toothpick in the center of the mold, it comes out clean.

3. Prince biscuit cake

Ingredients:

  • 250 g of cookies with chocolate
  • 3 large eggs
  • 120 g sugar
  • 200 ml whole milk
  • 40 ml of sunflower oil
  • 1 envelope of Royal yeast
  • 100 g of chocolate chips
  • 150 g of covered chocolate
  • 50g butter
  • 50 ml of water

Vanilla biscuit

Process:

  • Preheat the oven to 180ºC.
  • Crush the cookies with the mixer until they turn into powder.
  • Put them in a bowl, add the yeast, whole eggs, sugar, milk and oil and beat until everything is well integrated and creamy.
  • Grease a round baking dish with butter.
  • Pour the mixture over the mold and bake at 180ºC for 40 minutes or until a toothpick stick in the center comes out clean.
  • Remove from the oven and let cool inside the mold.
  • Chop the chocolate and put it in a bowl together with the butter and water and melt it in a double boiler or in the microwave.
  • Once the cake is cold, unmold it and cover it with the topping.
