Delicious Alfajores With Dulce De Leche

Dulce de leche alfajores don’t have to be a Christmas candy. They are a great snack idea because no one can resist them!

History of alfajores

The alfajores are of Arab origin and traditional from the Iberian Peninsula. It is a typical Spanish Christmas sweet, although the alfajores with cornstarch and dulce de leche are originally from Argentina. They are also eaten in Uruguay, Venezuela, Peru and other Latin American countries.

Alfajores with dulce de leche

Ingredients

  • 600 g of flour
  • 400 g cornstarch
  • 400 g of butter (healthier if it is of vegetable origin) ointment
  • 300 g icing sugar
  • 6 egg yolks
  • 4 teaspoons baking powder
  • 2 teaspoons ground vanilla or cinnamon
  • 1 tablespoon brandy
  • Lemon zest
  • 1 jar of dulce de leche

Preparation

Before you start, turn the oven on to preheat.

  1. Sift all the dry ingredients (flour, cornstarch, yeast, and sugar).
  2. Beat the sugar with the creamy butter.
  3. Add the egg yolks one by one until they form a fine cream.
  4. Add to the cream, the vanilla or cinnamon and the lemon zest and the spoonful of brandy.
  5. Add the cream to the flour until it forms a paste that is not too worked.
  6. Roll the dough into a ball, wrap it in cling film and put it in the fridge for about 15 minutes.
  7. Stretch the dough and cut with a pasta cutter or a round glass pieces  between 4 cm and 6 cm thick (remember that they are alfajores).
  8. Take a tray and sprinkle it with sugar, or bathe the base with butter and place the alfajores on it.
  9. Put them in the preheated oven at 180ºC for 12-15 minutes. Ideally, they should not brown
  10. Take them out of the oven and when they are warm, join two lids with dulce de leche in the center.

Alfajores with light dulce de leche

These alfajores have the advantage that you need very few ingredients. In addition, since they do not have sugar or butter, they are a version with fewer calories to the classic alfajor.

Ingredients

  • 1 and a half cups of flour
  • 5 egg yolks
  • 1 tablespoon brandy (or water)
  • 1 jar of dulce de leche

Preparation

  1. Sift the flour into a bowl.
  2. Add the yolks one by one with the brandy or water.
  3. Make a mix. If you see that it is very dry, add a little more water or brandy.
  4. Cut the dough into circles and put in the preheated oven at 200ºC for about 8-10 minutes.
  5. Take out of the oven and fill them with the dulce de leche.

Tips for your dulce de leche alfajores

  • You can pass them through grated coconut.
  • You can melt dark, milk or white chocolate to melt in a double boiler in the microwave and pass the alfajores through the chocolate. Run them over one side, let it solidify, and then run over the other side. To make your work easier you can put the chocolate with a brush.
  • If you make them with the 3 types of chocolate they will be great. .. and if you put some nuts and raisins on top you will give them a great color and flavor.
  • You can also simply sprinkle them with icing sugar.
  • If you want to give it another flavor you can add a little honey to the dough (1 teaspoon for every 300 grams of flour)
  • Ideally, once you have the alfajores prepared, you should keep them between 24 and 48 hours so that they get the right texture.
  • You can also make the triple alfajores (with 3 bases).
