  • Potatoes (1 kg).
  • Squid (1 kg).
  • Garlic (3 cloves, 40 g).
  • Salt, pepper (to taste).
  • Onion (1 piece, 50 g).
  • Red pepper (1 piece, 50 g).
  • Peeled tomato (1 piece, 50 g).
  • White wine (1 glass, 200 ml).
  • Green pepper (1 piece, 50 g).
  • Oregano (1 teaspoon, 5 m).
  • Olive oil (3 tablespoons, 50 ml).
  • Paprika powder (1 teaspoon, 5 ml).

Preparation

  1. Wash, clean and chop the squid.
  2. Pour the garlic and onion into a frying pan with oil to fry. The garlic must be crushed and the onion must be julienned.
  3. When the garlic begins to brown, add the peppers, cut into small pieces. Cook until slightly soft.
  4. Chop the tomatoes into squares and add to the pan. When these begin to fall apart, add the squid, which should be sautéed in the sauce.
  5. Garnish with the paprika powder, salt and pepper. Also put the bay leaf to provide its characteristic aroma.
  6. Add the glass of wine and water (enough so that the squid are completely covered). They will be known to be ready when they feel soft to chew.
  7. A few coriander leaves sprinkled on top will give it an exquisite taste. Accompany with some wrinkled, fried or steamed potatoes.

Ingredients

  • 1 glass of white wine (200 ml).
  • 10 small squid (500 g).
  • 1 can of peas (200 g).
  • 2 ripe tomatoes (80 g)
  • 10 prawns (300 g).
  • 1 green pepper (60 g).
  • One red pepper (60 g).
  • 1 cup of rice (200 g).
  • 1 large onion (80 g).
  • Olive oil.
  • 4 eggs (100 g)
  • Salt to taste).
  • Chopsticks.

Preparation

  1. Carefully clean the squid, removing the skin and chopping the tentacles into small pieces. Do the same with the prawns and reserve.
  2. Chop the vegetables into small cubes and fry them in a saucepan with olive oil. Ideally, add the vegetables in order: first the onion, then the peppers and finally the tomato.
  3. Add a pinch of salt and a pinch of sugar to eliminate the acidity. The idea is to cook over low heat for about 30 minutes.
  4. After half an hour, add the tentacles and cook for 10 minutes. Add the prawns and cook for five minutes. When ready, remove from heat and cool.
  5. Take the squid and fill with the sauce (reserve a portion for later). It must be done little by little and delicately, so that they are perfect. Later, puncture with a toothpick so that the filling does not come out, and brown in the pan with oil.
  6. When they have browned, place them in a saucepan and cover with wine and water. Cook for 25 minutes, until the squid is soft.
  7. Add the reserved sauce, peas and rice. Rectify the salt and wait for the rice to cook.
  8. Remove from the heat and serve to taste. Stewed squid is a very complete dish, but it can be served with salads or chips if desired.
