Pineapple and coconut bars recipe

This first recipe is very simple to make, it is divided into three parts and it will not take you more than an hour. This is why it can be a great idea when you don’t know what to make for dessert.

For the base:

  • 1/3 of cup of brown sugar
  • ½ cup of coconut oil
  • 1 cup of flour

For the filling:

  • 2 eggs
  • 1/3 cup of sugar
  • ¼ cup of flour
  • 1 cup of pineapple cut into chunks
  • 1 cup of fresh coconut
  • Lemon zest
  • Ron

For coverage:

  • 1 cup of grated coconut
  • 2 tablespoons of brown sugar

  • First we must reheat the oven to 180 ºC.
  • Then we mix the coconut oil with the sugar and the flour, mix until obtaining a thick dough.
  • Go ahead and line a baking dish with parchment paper and place the dough on top.
  • Then bake for 12-15 minutes. Remove from oven and let cool.
  • Besides, mix the eggs with the sugar, the rum and beat until it is a slightly creamy mixture.
  • Later, in another bowl, mix the pineapple with the coconut, the flour and the lemon zest.
  • Keep adding the egg mixture to the pineapple and coconut mixture with enveloping movements, until everything is well incorporated.
  • Then, pour the mixture over the previously prepared cookie base and bake for about 20 minutes until golden on top and the mixture is well set.
  • Once done, remove the pasta and let it cool.

While baking, prepare the topping.

  • First mix the sugar in a saucepan over low heat with a few drops of water until it forms a thick syrup.
  • Then add the coconut and keep on the fire until the coconut is transparent.
  • Then remove from the saucepan and let cool on greaseproof paper to make it easier to remove.
  • Once cold, place it on top of the pineapple and coconut paste to decorate and divide the square into 6 equal parts.

Another delicious recipe for coconut and pineapple bars

Ingredients:

For the base

  • 100g butter
  • 60g sugar
  • 1 small egg
  • 1 teaspoon vanilla
  • 220 g flour

For the cream

  • 1 cup of pineapple in syrup drained
  • 1 bottle of condensed milk
  • 120 ml milk
  • 4 tablespoons of powdered milk
  • 2 egg
  • 100 g of grated coconut

Utensils:

  • 1 bowl
  • Spatula
  • 1 baking tin
  • Baking paper
  • 1 mixer
  • Blender glass
  • 1 saucepan

  • To begin, preheat the oven to 180 ºC.
  • Then in a bowl, beat the butter with the sugar until you get a clear cream.
  • Continue adding the egg and vanilla. Beat until smooth.
  • Then add the flour and beat with enveloping movements until completely integrated.
  • Go ahead and line a rectangular baking dish with parchment paper and pour the mixture on top.
  • Finally bake for 20 minutes or until the cookie is golden brown. Remove from the oven and let cool.

While baking, prepare the pineapple and coconut cream.

  • First, beat the pineapple, condensed milk, milk, eggs and powdered milk with the mixer.
  • In a saucepan over the fire, bring water to a boil.
  • Then pour the mixture from the mixer over the previously baked cookie dough and put the mold in a slightly larger one.
  • Then place the boiling water in the space between the two molds.
  • Lastly, bake again for 30 to 40 minutes. After half the time, sprinkle the cake with the grated coconut. If the water dries up before the time passes, add more.
  • Once the time has passed, remove the bar from the oven and let it cool in the fridge.
  • Once cold, cut into bars and serve.
