  • To start, wash the plums, remove the seeds and cut them into 4 parts. Once ready, reserve the pieces in a container.
  • Then sift the flour along with the baking powder and salt and set it aside for use when needed.
  • Next, place the butter (ideally it is smooth) and the sugar in a bowl and beat until you get a creamy mixture. For this step you can use your hands or a mixer.
  • Once you have integrated both ingredients, add the eggs and whites one by one. You should beat enough each time you add the egg before continuing to add the next one.
  • Now is the time to add the yogurt and vanilla essence or orange zest to the mix.
  • The next step is to add the flour that you reserved at the beginning. The important thing is that you do it in two parts and with enveloping movements to avoid the formation of lumps. We advise you to use a spatula for this.
  • Then, take the mixture to a greased circular mold (with butter and flour) that is between 20 and 25 centimeters in diameter.

  • 200 grams of whole wheat flour.
  • 2 tablespoons of cornstarch.
  • 100 grams of cold butter.

  • 1 tablespoon of baking powder.

For the filling

  • 2 pots of 125 grams of Greek yogurt.
  • 3 eggs.
  • 2 tablespoons of sweetener.
  • 4 tablespoons of cornstarch.
  • 120 milliliters of skim milk.
  • Lemon zest.
  • 4 pitted red plums cut into slices.

Step by Step

  • To assemble the base, mix the whole wheat flour together with the cornstarch and the baking powder in a bowl.
  • Make a hole in the center and add the cold butter cut into cubes. Mix with the mixer on medium speed for 5 minutes. The idea is that a kind of sand is formed, but with integrated butter.
  • Then add the egg and the sweetener and beat until it is integrated and the dough is formed. When you notice that the mixture is homogeneous, place it on the counter and stretch with a roller until it fits in a mold of 20 centimeters in diameter.
  • Place this dough in the greased mold and prick with the fork so that it does not rise. If you want, you can cover with plastic wrap and place some element that makes weight.
  • Bake in a preheated 170 degree oven.
