Ingredients:

  • 4 medium zucchini
  • 300 g minced meat
  • Medium onion: 1 unit
  • Red pepper: 1 unit
  • Garlic clove: 1 unit
  • 2 eggs
  • 4 tablespoons of ground bread
  • 50 g of grated Parmesan cheese
  • Extra virgin olive oil
  • Salt, pepper, oregano and parsley (to taste)

preparation:

  1. Wash the zucchini and bring to a boil in a large pot with plenty of water.
  2. When the zucchini begin to be soft (approximately 10 minutes), remove them from the pot and let them cool.
  3. Cut the zucchini in half lengthwise. With the help of a spoon, remove the entire interior being careful not to break the skin. Grind the pulp with the help of a fork and reserve.
  4. In a hot frying pan, place a little olive oil and add the finely chopped onion, garlic and pepper. Cook for five minutes until the vegetables are soft.
  5. Add the minced meat, season and cook until the meat has released all its juice. Add the pulp of the zucchini, a tablespoon of Parmesan cheese, the two eggs, oregano, parsley and the breadcrumbs. Stir well and remove from heat.
  6. Fill the zucchini with the mixture and top with Parmesan cheese. Put in the oven previously hot at 200 ºC for 15-20 minutes or until the zucchini are golden brown.
