Roquefort Chicken Breast Recipe

Roquefort cheese is a blue cheese of French origin that is made from sheep’s milk.  It has an intense smell and flavor that for many is delicious. The fungus that gives it this distinctive flavor is penicillium roqueforti , a mold typical of the Roquefort-sur-Soulzon area where the cheese comes from. There are only 6 Roquefort producers in the world, and they are all concentrated in this area of ​​France.

To prepare a serving for two people of roquefort chicken, you will need approximately 200 grams.

Ingredients

This recipe has two main ingredients: chicken breasts and Roquefort cheese. But you will also need :

  • 4 potatoes (300 g).
  • Salt and pepper to taste.
  • Olive oil.
  • A pinch of nutmeg.
  • 4 chicken breasts (600 g).
  • 1 1/4 cup of heavy cream (300 ml).
  • Aromatic herbs: oregano, thyme, rosemary, marjoram, etc. (to taste). For a fresher touch, you can opt for some finely chopped chives.
  • 1 cup of assorted cheeses, including roquefort (300 g).

Preparation

This recipe is more than enough for at least 2 servings. Although it can also fit well for 4.

  1. Season the chicken breasts with salt and pepper and grill them.
  2. While they cook, heat the cream with the cheeses in a pot. To flavor, add the nutmeg (and if you wish, the aromatic herbs of your choice).
  3. Let the cheese melt and the cream to reduce.
  4. Pour this cheese sauce over the breasts and reserve.
  5. Grate the potatoes and add salt and pepper to taste.
  6. Make balls with this mixture, put them in oil and allow them to brown well.
  7. Once golden brown, serve as a garnish along with the chicken.

The preparation time will not take you more than 20 minutes.

Some tips for a perfect roquefort chicken

If you can’t find Roquefort cheese, you can buy the Roquefort sauce already prepared. Although it is always best to prepare it at home using natural ingredients, packaged sauce is not a bad alternative.

If you like strong flavors and heavy dishes, you can add a little pancetta to the preparation. But remember that the bacon will add more salt to the dish.
